Job Description
Lombardi Family Concepts is excited to announce the exceptional career opportunity of Director of Culinary.
The Director of Culinary is responsible for all facets of multi-concept culinary operations including but not limited to menu development and planning, food quality, staffing, vendor monitoring, inventory, and budgeting.
You will play an active role in the future development and management of new restaurant/concept locations as growth dictates.
**Please note: This position requires relocation to Dallas, TX – Relocation assistance provided**
Summary of Essential Duties:
· Concept and menu design
· Intricate recipe development, training and implementation
· Meets and leads regular scheduled meetings with corporate Executive Chefs and Executive Team
· Interacts daily with other department members that may include; Corporate Chefs, Executive Chefs, marketing department, and Chief and Vice President of Operations
· Responsible for interviewing, hiring, training, planning, assigning, and directing work, evaluating performance, rewarding and disciplining associates; addressing complaints and resolving problems
· Monitors business volume forecast and plans accordingly in areas of culinary labor, productivity, costs and other expenses
· Responsible for implementing and maintaining excellent service by collaborating with front of house management to achieve guest satisfaction
Qualifications:
· 10+ years of proven culinary experience at upscale/fine-dining restaurants/hotels
· Italian Cuisine experience required
· 5+ years of Executive Chef or Chef de Cuisine experience
· Previous experience performing new restaurant openings responsibilities such as training and motivating employees into a high-performing team and implementing new systems, policies and procedures
· Strong understanding of forecasting, budgeting, scheduling, inventory controls, P&L analysis, and food and beverage costs
· Demonstrated ability to mentor and develop growing talent for the company
· Must exemplify the highest standards in honesty, integrity, humility and leadership
Job Type: Full-time
Pay: $140,000.00 - $200,000.00 per year
