Job Description
The Role:
Reporting to the Kitchen Department Manager and supervised by the Kitchen Department Manager and/or Kitchen Department Head and/or their delegate, you play a crucial role in maintaining the efficient and effective operation of the Sushi production to achieve optimal performance and adherence to departmental standards. You will provide hands on support to team members and support the training and development of staff.
Major Responsibilities:
• Based on orders received/production plan, prepare and produce the right quantity of foods for the assigned section, including but are not limited to, Nigiri Sushi, Rolls, Sashimi, Teriyaki, etc. Conduct inventory/wastage control including fish usage ratio control and temperature recording.
• Ensure product quality, food safety, freshness, and FIFO is strictly practiced within the department.
• Responsible for the cleanliness and organization of sushi station.
• Keep product display full, attractive, and neat, by timely replenish inventory as necessary.
• Follow procedures to verify and process expired sushi products and manage shrinkage.
• Familiar with product ordering process and execution. Receive delivered products and take customers’ orders.
• Address customer complaints promptly, fostering positive relationships through attentive service and genuine engagement.
• Provide guidance and supervision to junior team members, provide feedback on staff performance, assist in staff training and development within the department.
• Set a positive example for the team by consistently performing all assigned duties to a satisfactory standard, fostering a culture of excellence within the department.
• Participate in new product research and development process, and product innovations.
• Fulfill any additional responsibilities as assigned by superiors, contributing to the overall efficiency and success of the department.
Knowledge, Skills and Ability Requirements:
• Willing to work flexible shifts, including weekdays, weekends, evenings, and statutory holidays.
• Good communication skills in English, proficiency in Chinese (Cantonese and/or Mandarin) is advantageous.
• Ability to deliver Sushi Production research and development.
• Minimum of 3 years of relevant experience, with at least 1 year of supervisory experience preferred, demonstrating leadership capabilities.
• Possess knowledge and experience in supervising Kitchen production workflow and controlling cost and wastage.
• Well versed with workplace health and safety protocols.
• Familiar with relevant tools and equipment, able to interpret product labels accurately.
• Demonstrated commitment, accountability, and reliability in previous roles.
• A good team player, capable of collaborating with and assisting colleagues.
• Good organization, problem-solving, interpersonal, and customer service skills.
• Positive, proactive, and self-motivated work ethic.

Pay: $25.50 - $31.00 per hour
