Sous Chef – Sortino's Italian Kitchen Kalahari Resorts & Conventions is seeking aSous Chef, Sortino's Italian Kitchen.We are seeking an elevated chef at the top of their game. Sortino's Italian Kitchen is a new-age red sauce restaurant where old-school Italian cuisine meets the modern age. Sortino's Italian Kitchen is a casual restaurant and bar that brings to Round Rock a tradition of hospitality established by Giorgio and Giacomo Sortino more than 60 years ago when they opened the original Sortino's Little Italy restaurant in Sandusky, Ohio. The ideal candidate would have culinary expertise, attention to detail, and strong leadership skills. The ability to train, mentor, and motivate a team will be the key to success in this position. This is a position that will require nights, weekends, and holidays as needed. Key Responsibilities β€’ Assist the Chef in the day-to-day operations of a high-volume, resort-based Italian kitchen, including preparation, service, and closing procedures. β€’ Lead and support kitchen team members in delivering an authentic Italian dining experience, including oversight of the pizzeria station. β€’ Ensure consistent quality, flavor, and presentation across all culinary offerings, from the main dining room to take-out services. β€’ Monitor food cost controls, portioning, prep par levels, and waste management to support operational efficiency. β€’ Conduct daily line checks to verify that all kitchen stations are fully stocked, organized, and ready for smooth service. β€’ Uphold the highest standards of food safety and sanitation, including proper product rotation (FIFO), labeling, and storage practices. β€’ Maintain a clean, organized, and well-functioning kitchen in compliance with health department and resort standards. β€’ Step confidently into a leadership role in the Chef's absence, ensuring continuity of service, staff support, and culinary excellence. What We're Looking For β€’ We require a background of three years of progressive culinary experience and three years of management experience. β€’ Strong background in Italian cuisine and pizza operations preferred. β€’ Basic knowledge of P&L, labor control, & food cost/recipe costing. β€’ Proven ability to maintain composure and efficiency in a fast-paced environment. β€’ ServeSafe certification or equivalent (preferred). β€’ Passion for food, hospitality, and culinary excellence.
